came to know her through her guest post on Joys of Fasting to Feasting
on Yummy Food. After that I've been a regular reader of all her post.
Though we have not yet chatted personally, but have been commenting on
each others post. She has got a wonderful collection of recipes mostly
from her native Kerala and off course a lot of sweets and bakes as the
title of her blog suggests... Over to you dear..... :)

This is Rafeeda from “The Big Sweet Tooth” (http://sweettoothraf.blogspot.com). The time when Razina published her desire to have guest posts related to baking, I thought I would contribute. Why? Because I love to bake! More than eating the final product, it is the whole feeling that thrills me – putting together all the ingredients, following the steps, beating the wet ingredients, whisking the dry ingredients, preheating the oven, greasing the baking pan, testing the batter if it is sufficiently sweet, pouring the final mix into the pan, sneaking into the oven to check how the cake is faring, and the best and the foremost, the heavenly smell that spreads across the house when the batter is baking!
As of now, I am on a baking ban, thanks to my umma who thinks baking is all about adding on empty calories. However, I still manage to sneak in at times and then explain her that not all baking is bad!
OK, I thought I would offer Razina a very easy, quick fix muffins. I have to make a confession – I love eggless bakes. Yes, bakes with eggs always taste better but for quick bakes, eggless is always a good option. The main thing is that you don’t need to beat eggs for so many minutes – I am plain lazy! Hehe… If the recipe calls for eggs, I check as to the beating time for the eggs. You see here, there is hardly any beating involved. I found this recipe during my google searching on my phone, unfortunately do not remember the reference! It’s so easy, it hardly takes 10 minutes to mix and put together the batter and within 45 minutes, you have the muffins ready with you… So off to the recipe…

A few handy tips for baking, by Rafeeda AR of The Big Sweet Tooth...
- Have a basic set of pans – a couple of round pans, a loaf pan and a muffin pan should be more than enough to start
- Have a set of measuring spoons and cups – one set for dry ingredients and the other for wet. For measuring liquids, always keep the ml cups handy. Full details link 1 and link 2
- Always follow a recipe to the T. This is very important. Unlike in cooking where you can adjust as per your tastes, in baking, it is always better to follow each and every step exactly to avoid any mishaps. Perhaps, the only thing you could adjust would be the sugar levels!!!
Since kitchen is the one place which is most used in the house and which tends to get messy easily, maintaining the tiles is a big task. But if done on a regular basis, this task can be easily achieved and you can have a brand new looking tiles. Below are the steps that I follow everyday in keeping them clean and shining:
- Sweep - Sweep the kitchen floor daily. It removes all the dirt, debris, food particles or any other waste lying on the floor
- Mop - Mop the kitchen floor with warm water everyday after sweeping. It brings shines and removes any liquid fallen or stains on the floor
- Dry the floor - Immediately after mopping, run a dry mop over it so that the floor is dried up and does not accumulate new dust over it
- Instant cleaning of spills - Any spills on the floor should be cleaned immediately and dried with a cloth

Razina is one among those good pals :-) When Razina invited me to write a guest post, I got really excited to do it. So here goes the recipe of red velvet cake with Butter Cream Frosting. Cheese cream is a better alternative for butter cream frosting.

Today, when my hubby bought chicken pieces for making lunch, I did not feel like making those curries every time we make, really bored of it. So thought of having a dry menu, and chicken fry was the first thing that came to my mind. It is easy to make and everybody had their tummy satisfied. My little one thought it was KFC and had it to the full :), today's post gives the recipe of this easy to make chicken fry, here u go....
Ok, today's post is not a fresh dish that I prepared, instead it was lying in my drafts folder for long, I had made this before ramadan. Got busy with other stuff and this was left as it is. So now when as I was going through my draft folder, this one striked me and published it,, hehehe,,, well this is one of my favourite food item that is prepared in a jiffy, there are no elaborate procedure for it nor any hassles in making, just perfect for a lazy cook like me... :))), here you go with the recipe, hope u'll like it, as much as it is to my taste buds.....

- Minced Meat - 1/2 kg
- Garlic paste - 1/2 tsp
- Cumin powder - 1/2 tsp
- Coriander powder - 1/2 tsp, roasted
- Black pepper powder - a pinch
- Green chillies - 4, finely chopped and crushed
- Coriander leaves - 1 small bunch
- Salt - to taste
- Onions - 1, finely sliced
- Oil - 3/4 cup
- Ginger paste - 1/4 tsp
- Garlic paste - 1/4 tsp
- Garam masala powder - 1 tsp
- Coriander powder - 1/2 tsp, roasted
- Kashmiri red chilli powder - 1/4 tsp
- Salt - to taste
- Green chilli - 1, slit
- Coriander leaves - chopped, for garnishing
- Mix all the ingredients required for the koftas and make into balls and refrigerate for about 30 minutes
- Shallow fry them in a very little oil in a non-stick pan and keep aside
- For the gravy, heat oil in a deep pot. Add the onions and fry till golden brown. Remove and blend it in the mixer
- Now put the blended onions back in the oil, add ginger garlic paste
- Mix the garam masala powder, dhania powder, red chilli powder and salt with little water and add it to the gravy and fry till oil separates
- Add water. Once it simmers reduce the heat to low and gently add the fried kababs
- Cover and simmer on low heat to cook the kababs through
- Every once in a while, open the pot and gently swirl everything together
- Once the kababs are fully cooked adjust salt and add slit green chilli
- Garnish it with coriander leaves and serve!!!

- Rice - 1 cup
- Onion - 1/2, small, finely sliced
- Peas - 1/2 cup
- Salt - to taste
- Water - 2 cups
- Oil - 1 tbsp
- In a pot, heat oil and fry the onions till golden brown. Remove
- In the same oil add peas and saute for few seconds
- Add rice and mix
- Add water and salt and cook till rice is done, stirring occasionally
- Serve!!!

- Milk - 1 ltr
- Bread - 4 slices, each slice cut into 4 triangles/squares
- Sugar - 1 cup
- Ghee - 1/2 cup
- Water - 1/2 cup
- Saffron - 1/2 tsp (optional)
- Cardamom - 2
- Almonds and pistachios - chopped
Method:
- To make rabri, boil the milk on medium heat till it reduces to 1/4 quantity. Keep stirring continuously. Then add sugar and cardamoms. Once the sugar dissolves and the milk comes to a boil, take off the heat and let it cool for 5 minutes
- Make sugar syrup by boiling half cup sugar in half cup water. Add 1/2 tsp saffron. Keep on stirring till the sugar dissolves and water comes to a boil. Simmer for 2 minutes. Then take off heat and put in a bowl
- In a pan, add ghee and shallow fry the bread pieces till it turns light brown in colour
- Dip both the sides of the bread pieces in sugar syrup i.e., for about half a minute and place it in a serving plate
- Pour over the rabri, just before serving. Garnish with sliced almonds and pistachios

- Thin Vermicelli - 1 1/2 cups, broken
- Green Cardamom - 4-5
- Full cream milk - 1 litre
- Condensed milk - 1 tin
- Fresh cream - 250 ml
- Dry dates - 5-6, soaked overnight
- Almonds - 3-4
- Pistachios - 8-10
- Butter - 3-4 tbsp
Method:
- In a saucepan, add green cardamom, add butter and let it melt
- Add all the dry fruits and fry. Remove
- Add vermicelli and fry them until it turns light golden brown in colour
- Add milk and dry dates and cook over medium flame for 10-15 minutes
- Add half of the dry fruits, fresh cream and condensed milk and stir
- Simmer for around 5 minutes
- Garnish with the remaining dry fruits and serve hot or cold
