Spongy Dates Cake Recipe

This is the first time I had baked a cake using dates. This recipe is made to the T from Suhaina's My Singapore Kitchen and she claimed that this was one of the best cake she has done so far and I must admit, it was the best - super moist and spongy.
This cake becomes all the more healthy due to the use of the nutritious ingredient, dates. You can also add toasted walnuts for extra crunch. The entire cake was finished by us the moment it came out of the oven and hence I couldn't click a proper pic of this delicious beauty :)
1 3/4 cup, all purpose flour or maida
200 gms dates, deseeded and chopped
1 cup, sugar
2 large, eggs
115 gms, melted butter
1/2 tsp, baking powder
1/2 tsp, baking soda
1 cup, water
1 tsp, vanilla extract
Then mash the dates with hand or spoon and add in the melted butter and vanilla extract. Stir
Preheat the oven at 180C for 10 minutes
Beat eggs and sugar for around 6-7 minutes or until it becomes a ribbon stage
Sift all purpose flour with baking powder and salt
Add half of the flour mixture into the egg mixture and fold to combine. Do not deflate the egg mixture
Add the dates and butter mixture and combine well
Finally add the remaining flour mixture and fold gently
Pour this mixture into 8 inch round pan and bake for 45 minutes or until a tooth pick inserted comes out clean
Invert onto a wire rack and cool completely
Slice and serve
