Chicken Biryani

For marination:
Chicken - 1/2 kg
Salt - 1/4 tsp
Lemon juice - 3 tsp
Turmeric powder - 1 pinch
Coriander powder - 1/2 tsp
Red chilli powder - 1/2 tsp
Ginger garlic paste - 1/2 tsp
For gravy:
Oil – 3 spoons
Ghee – 2 tsp
Bay leaf – 2 nos
Cinnamon – 2 nos
Cloves – 5 nos
Cardamom – 3 nos
Salt - to taste
Green chillies – 5, finely chopped
Onion - 4, medium size, finely sliced
Ginger garlic paste - 1 tsp
Tomato finely chopped - 2 medium size, finely chopped
Red chilli powder – 1 tsp
Coriander powder – 3 tsp
Turmeric powder – ¼ tsp
For Rice:
Basmati rice – ½ kg
Ghee – 3 tbsp
Cardamom – 2
Bay leaf – 2
Water – 4 times the rice
Salt – to taste, on the higher side
Coriander leaves - a bunch, finely chopped
Method:
Wash and cut chicken into small pieces and marinate for an hour using ingredients for marination
In a heavy deep vessel add oil and ghee together and fry bay leaf, cinnamon, cloves, cardamom along with green chillies
Add onions and fry till golden brown
Add ginger garlic paste. Add turmeric powder, red chilli powder, coriander powder and salt
Add tomatoes and saute till gravy thickens to a paste
Add marinated chicken and cook till it is done
In a large vessel heat ghee, cardamom and bay leaves
Add water and salt and let it come to a boil
Add rice and cook till 90% done. Strain
Now in a separate vessel, apply ghee on the bottom and then layer
the rice, chicken, fried onions and coriander leaves.
Repeat the layers. Drizzle milk on top and simmer for 20 minutes
