Royal Chicken Qorma

- Chicken - 1/2 kg
- Bay leaf - 1
- Onion - 1, medium, finely sliced
- Yoghurt - 1/2 cup
- Khoya - 1 tbsp
- Salt - to taste
- Oil/Ghee
- Cardamom - 2
- Cloves - 2
- Cinnamon - 1/2 inch
- Black peppercorns - 2
- Cumin seeds - 1/4 tsp
- Sesame seeds - 1 tsp
- Melon seeds - 1 tsp
- Poppy seeds - 1 tsp
- Ginger garlic paste - 1 tsp
- Red chilli powder - 1/2 tsp
- Kashmiri chilli powder - 1/2 tsp
- Coriander powder - 1 tbsp
- Marinate the chicken pieces with yoghurt and keep aside for 30 minutes
- In a blender add all the ingredients mentioned under the paste along with little water and blend to a smooth paste
- In a kadhai, heat oil and ghee and add the cashew nuts. Fry for few seconds and remove
- In the same oil/ghee add bay leaf and fry for few seconds
- Add onions and fry till golden brown in colour
- Add the marinated chicken pieces and cook till all water evaporates
- Add the paste to the chicken and cook till oil separates
- Add khoya and stir
- Add salt and 1 cup of water and cook till chicken is done
- Garnish with fried cashews and serve
