Bhindi Masala | How to make Bhindi Masala

Usually I prepare bhindi or okras as a stir fry, the recipe of which you can find here. Today I'm sharing bhindi masala which is a form of semi dry gravy with a nice mix of spice. This can be best had with rotis or phulkas.
Ingredients:
Bhindi / Okra / Ladies finger - 200 gms, washed and chopped into 2 inch pieces
Onion - 1 medium, sliced
Tomato - 1 medium, chopped
Cumin seeds - 1/2 tsp
Green chillies - 1-2, chopped
Garlic - 1/4 tsp, crushed
Red chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Coriander powder - 3/4 tsp
Garam masala powder - 3/4 tsp
Amchur powder - 1/2 tsp
Salt - to tasteOil
Method:
In a kadhai, heat oil and saute the chopped bhindis till they are fully done. Remove and keep aside
In the same kadhai, add a little more oil and crackle the cumin seeds
Add onion and saute till they turn transparent
Add garlic and green chillies and saute for few minutes
Add tomatoes, red chilli powder, turmeric, coriander powder and garam masala powder. Cook till tomatoes are mashed up, you may add a little water in between
Add cooked bhindi, salt and amchur powder. Give a mix and cook covered for around 5 minutes
Serve hot with roti or as a side dish alongwith daal
