Vegetable Biryani with Leftover Rice

Have you got some leftover boiled rice and don't know what to do with it??? Or you are already bored of making and eating fried rice, zeera rice etc. or may be you don't feel like making any gravy to have with it. Then here is a solution, you can turn your plain boiled rice into a yummy biryani. The trick is to make a nice and spicy dry vegetable gravy and spreading the rice over it and giving it dum. You can use any vegetable that you prefer or have with you, there is no hard and fast rule for it. It gets done in a jiffy and this is how I'm using my leftovers these days.....:)
Cumin seeds - 1 tsp
Bay leaf - 1
Star anise - 1
Cardamom - 2
Cloves - 2
Ginger garlic paste - 1 tsp
Tomatoes - 1 small, chopped
Turmeric - 1/4 tsp
Biryani masala - 2 tsp
Vegetables - any of your choice, I've used here carrots, capsicum and cauliflower
Salt - to taste
Leftover boiled rice - 2-3 cups
Coriander leaves - for garnishing
Oil/Ghee
Method:
In a kadhai, heat oil and add the bay leaf, star anise, cardamom, cloves and cumin seeds. Saute for 30 seconds
Add onions and saute till they become golden brown in colour
Add ginger garlic paste and cook till raw smell disappears
Add tomatoes, turmeric, biryani masala and salt. Cook till tomatoes are fully mashed up
Add in the cut vegetables and half cup of water and cook till vegetables are done and all the water dries up
Spread the leftover boiled rice over this mixture and drizzle some ghee over top
Cook it on dum for 10 minutes
Fluff up the biryani and serve along with raita
