Mutton Yakhni Pulao

Ingredients:

For yakhni: 
  • Mutton - 1/2 kg 
  • Onion - 1 medium, finely sliced
  • Ginger garlic paste - 2 tsp 
  • Cloves - 3 
  • Cardamoms - 3 
  • Peppercorns - 5-7
  • Cinnamon stick - 1 
  • Bay leaf - 2 
  • Dried red chillies - 2, deseeded
  • Garam masala powder - 1 tsp 
  • Salt - to taste 
  • Oil/Ghee
  • Water - 2 times rice
For Pulao:
  • Rice - 1/2 kg
  • Bay leaf - 1
  • Green chillies - 4
  • Tomatoes - 2
  • Salt - to taste
  • Ghee
  • Coriander leaves - 1/2 cup
  • Onions - 1 fried, for garnishing
Method:

  • In a pressure cooker heat oil/ghee and saute the mutton pieces for few minutes
  • Add ginger garlic paste and saute till raw smell leaves
  • Add all the remaining ingredients mentioned under yakhni and cook for 5 minutes
  • Add water and cook till meat is tender
  • Strain the stock in another bowl and separate the meat. Discard all the spices
  • In a pot heat ghee and add the bay leaf
  • Add the tomatoes and green chillies. Cook till tomatoes turn slightly soft
  • Add rice and mix
  • Add the mutton pieces and the stock
  • Adjust the salt and water required and cook till the rice is done stirring occasionally
  • When the rice is almost done, add the coriander leaves and mix
  • Garnish it with fried onions and chopped coriander leaves
