Tomato Rice
Basmati rice - 1 cup, washed and soaked for 30 minutes
Cardamom - 2
Cloves - 2
Bay leaf - 1
Onions - 1 small, finally slicedBay leaf - 1
Tomatoes - 3 medium, ripe and juicy, chopped
Ginger garlic paste - 1/2 tsp
Turmeric - 1/4 tsp
Red chilli powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Salt - to taste
Oil - 1 tsp
Ghee - 1 tsp
Method:
In a pot, heat oil and ghee, add cardamoms, cloves and bay leaf. Sizzle it for few seconds

Add the onions and fry till light golden in colour
Add ginger garlic paste and saute till raw smell disappears
Add tomatoes, turmeric, red chilli powder, garam masala powder and salt. Cook till tomatoes are mashed up
Add the rice and mix well
Add 2 cups of water and cook till rice is done
