Aloo Dum Biryani | Vegetarian Biryani

Made this my all time favorite and yummy Aloo Dum Biryani yesterday for dinner. It was very light, flavorful and has come out perfect. Don't get scared looking into the long list of ingredients and method, it's pretty easy just that it requires quiet number of ingredients all available at home. Do try this for your dinner today.....
Ingredients:
For making gravy:
Potatoes - 5-6, medium size, washed, peeled, cut into cubes and soaked in water till use
Onion - 2 medium, finely sliced
Cardamoms - 2
Black peppercorns - 2-3
Cloves - 2
Cinnamon - 1 inch
Bay leaf - 2
Tomato - 1 small, chopped
Green chillies - 2-3, chopped
Ginger garlic paste - 1 tsp
Turmeric - 1/4 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Red chilli powder - 1 tsp
Garam masala powder - 1/2 tsp
Yoghurt - 1/2 cup
Salt - to taste
Oil
For making rice:
Rice - 1/2 kg basmati, washed and soaked for 30 minutes
Cloves - 3
Salt - 4 tsp, adjust it on slightly higher side
Oil - 2 tbsp
Vinegar - few drops
Saffron - few strands, mixed with 2 tbsp of milk
Coriander leaves - for garnishing
Method:
In a kadhai, heat oil and fry the onions till golden brown. Remove and keep aside
Add the potatoes and saute till it starts turning golden. Remove
In the same oil, add the whole spices and let it crackle
Now add half the fried onions, ginger garlic paste and fry for few seconds or till the raw smell fades away
Add salt, turmeric, coriander powder, red chilli powder, garam masala powder and fry for few seconds
Add tomatoes and green chillies and cook till oil separates
Lower the flame and add yoghurt and cook for few minutes
Add the sauteed potatoes back in the kadhai and mix well
Add just enough water and cook covered on low flame till the potatoes are properly done and the gravy is very very thick (almost dried up)
In a separate pot, take lots of water and bring it to a boil
Add cloves and salt
Add rice and once it starts boiling, add oil and vinegar.Stir
Once the rice is 90% done, switch off the flame and strain
Now take a pot and grease it with oil/ghee
Layer it with rice, potato gravy, some fried onions and coriander leaves. Repeat the process till all the rice and potatoes are used up
Drizzle milk infused with saffron on top.
Garnish with the remaining brown onions and coriander leaves, cover the lid and place any heavy item on it and simmer for 20 minutes
Yummy biryani is ready!!!
